Banana Bread
Low calorie, low fat, low sugar and full of fibre.
Ingredients:
- 2 ripe bananas 
- 1/2 cup erythritol 
- 1 3/4 cups of whole-wheat flour 
- 1/2 cup of unsweetened applesauce 
- 1 teaspoon of baking soda 
- 1 teaspoon of salt 
- 1 teaspoon of ground pumpkin pie spice 
- 1/2 tsp cinnamon 
Optional: 1/2 apple or pear, peeled and finely diced
Directions:
- Preheat your oven to 350°F (175°C). Lightly grease a 9-inch loaf pan. 
- In a medium-sized bowl, mash the ripe bananas using a fork until smooth. 
- Add the finely diced apple(if you choose to use it), erythritol, whole-wheat flour, unsweetened applesauce, baking soda, salt, and ground cinnamon and pumpkin pie spice to the bowl with the mashed bananas. Mix well until all ingredients are thoroughly combined. 
- Pour the batter into the greased loaf pan, spreading it evenly. 
- Place the pan in the preheated oven and bake for 40 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean. 
- Once baked, remove the loaf from the oven and allow it to cool in the pan for about 15 minutes. 
- After cooling slightly, transfer the loaf to a wire rack to cool completely. 
- Slice and serve your delicious banana apple bread, and enjoy!
